From Château Montfin, nested in the heart of the garrigue, pine forest and vineyards, in the Aude department, you can see the coastal lagoons inhabited by flamingos.
The small white marlstone-limestone hills dominating the coastline and terraces of quaternary gravel punctuated with red sandstone produce powerful and generous wines with a fruity and spicy finish endowed with garrigue fragrance.
Jerome Esteve's wines are regularly award winning.
